Historian Rachel Laudan reminds us that the dietary preferences of modern foodies has little to do with past practices, no matter how much they use that imagery, that fast food has been around as long as civilization, that our choices result from bounty that few in past centuries enjoyed, and that many past practices now condemned were significant improvements from what went before.
