The gluten-free diet fad

Celiac disease is an autoimmune disorder of the small intestine. The only remedy is a gluten-free diet. But… it affects fewer than 1% of the population, who are genetically predisposed. So why do so many people think they are sensitive to gluten? Partly, some small amount of science. Largely, a dietary fad. Beyond some uncommon diseases like celiac, gluten sensitivity likely doesn’t exist.

Despite that, I suspect many who go on a gluten-free diet see some benefit. Just not for the reason they think.
